Eleven Madison Park to Reintroduce Meat on Menu
It seems Eleven Madison Park, one of the world’s top restaurants, is making a shift back to serving meat, just four years after adopting a vegan-only menu.
Chef Daniel Humm has stated that the costs associated with offering solely plant-based dishes were prohibitively high.
“It’s tough to host a corporate dinner at a plant-based venue,” Humm mentioned, adding that he did not foresee the decision would narrow their clientele. He expressed concerns over being labeled a hypocrite, but believes the best way to promote plant-based dining is to include everyone at the table.
The change was officially announced on the restaurant’s website, which indicated the return of limited animal-based options.
Humm had once described running a restaurant that earned three Michelin stars for its solely vegan offerings as akin to “walking on water.” Yet, he admitted he was dissatisfied with dishes like “land caviar” and smoked potatoes.
He reflected on the unintended consequences of the previous menu, acknowledging that it made some customers feel excluded. “We didn’t mean to shut anyone out; that contradicts the essence of hospitality,” he stated.
Starting October 14, Eleven Madison Park will again offer fish and meat on its menu.
User reactions on social media suggested discontent among some vegans. Comments included critiques about prioritizing profits over ethical concerns regarding climate change and animal welfare. One user lamented how they felt disappointed by the restaurant’s transformation from a celebrated vegan destination to a typical eatery.
In 2021, during its reopening from COVID-19 restrictions, the restaurant had eliminated meat items from its $365 nine-course menu, emphasizing sustainability in its culinary practices. Humm noted the environmental impacts associated with animal agriculture, particularly how certain foods contribute significantly to greenhouse gas emissions.
As for the upcoming changes, it remains unclear if the restaurant will adopt a sustainable approach regarding its meat offerings. There has been no immediate response from Humm or Eleven Madison Park regarding these questions.
While critics voiced their concerns, the restaurant continued to receive accolades and sustain its Michelin star reputation, although interest in its strictly vegan menu has waned noticeably this year.
Though patrons can still opt for all-vegan meals, it’s important to note that the fixed price of $365 applies regardless of their selection.
