Chee Chi’s Mexican Restaurant Makes a Comeback

After being away from the dining scene for over two decades, Chee Chi’s Mexican Restaurant is set to reopen its flagship location on October 6th in St. Louis Park, Minnesota, just outside Minneapolis.

This comeback is fueled by nostalgia, a desire to reconnect with classic and contemporary Mexican flavors.

Michael McDermott, who is behind this revival and the son of one of the original co-founders, explained that the goal is to honor its legacy while adapting to the evolving tastes of American diners since 2004.

McDermott remarked that when Chee Chi first appeared in the Midwest and East Coast, it introduced many to Mexican cuisine.

“We realize consumers are more knowledgeable now, so we’re crafting a menu that reflects this, including not only Chee Chi’s classic dishes but also new options,” he added.

Yet, Chee Chi’s remains loyal to the original tastes that fans grew to love.

He mentioned retaining many classic recipes, such as chimichangas and fried ice cream. McDermott, who previously founded Kona Grill and Rojo Mexican Grill, emphasized that reviving this brand was a priority.

“I rely on prayer and meditation, and this concept came to me,” he shared, highlighting how he secured the rights from Homer Foods, which holds the trademark.

McDermott pointed out that Chee Chi carved a special niche in American dining history, opening doors for millions to experience Mexican food and create cherished memories.

Reflecting on the past, he said that the atmosphere was vibrant, with celebratory music, and many fond memories were tied to the restaurant. He’s received numerous heartfelt letters from individuals recalling significant moments in their lives spent at Chee Chi’s.

However, McDermott acknowledged that preserving the legacy of Chi-Chi’s poses significant challenges.

“I didn’t realize the impact it had on people,” he admitted.

He stated, “Reintroducing this concept successfully while making it relevant to today’s audience is the hardest part.” He’s optimistic about future growth, aiming to focus initially on the Midwest and East Coast again.

McDermott has already begun discussions with real estate developers and potential franchisees, anticipating it could hit the right notes again.
