Republique Bakery in Los Angeles Receives New Accolade
Los Angeles’ popular bakery has added yet another accolade to its collection. Republique, a bakery/café/restaurant located on La Brea Avenue and run by chefs Walter and Margarita Manzke, has been named one of the top French bakeries in the United States according to Tasting Table.
This recognition places Republique among only two California bakeries on the list, alongside San Francisco’s Arcico Bakery. It’s a testament to the growing list of accolades for this beloved establishment.
The bakery was previously highlighted in the Michelin Guide in October, and Chef Margarita won the esteemed James Beard Award for Outstanding Pastry Chef or Baker earlier this year.
Having opened its doors in November 2013, Republique has consistently made appearances on the Los Angeles Times’ 101 Best List and is also a favorite of the newspaper’s restaurant critic, Bill Addison.
Margarita, originally from the Philippines, pursued her culinary education in London. “I attended Cordon Bleu there and completed both culinary and pastry programs, then went on to the CIA in Hyde Park,” she shared.
She sharpened her skills at renowned Los Angeles venues like Patina, Spago, and Melisse before venturing to Carmel with her husband, where they opened Bouchée, Cantinetta Luca, and l’Auberge Carmel. It was here that she perfected her French baguette.
The couple eventually returned to Los Angeles to start Republique in a venue rich with Hollywood history, originally built in 1928 and once serving as Charlie Chaplin’s office.
In 1989, chefs Mark Peel and Nancy Silverton transformed it into La Brea Bakery and later Campanile. After the latter closed in 2012, the space was renovated and evolved into Republique, where it has since captured the hearts (and taste buds) of many.
In response to the recent honor, Chef Margarita expressed gratitude, noting the recognition reflects the collective efforts of the entire team. “It’s not just the pastry team; everyone contributes to creating a wonderful atmosphere to enjoy pastries and coffee,” she said.
Daily hours for République’s café are 8 a.m. to 2 p.m., with dinner service available Tuesday to Friday from 5:30 p.m. to 10 p.m., and Saturday from 5 p.m. to 10 p.m.
