During the Saturday, Nov. 25 broadcast, “Fox & Friends Weekend” co-host Rachel Campos-Duffy made her “famous” lemon ricotta pancakes.
This recipe appears in the new cookbook “Cooking with Friends: Eat, Drink & Be Merry,” by “Fox & Friends First” co-host Carly Shimkus.

“There’s so much love in this book because it’s got recipes just like you, Rachel. You’ve made this for your own kids.”

Campos-Duffy agreed: “They love it.”
Pancakes are made by first combining the dry ingredients in one bowl and the wet ingredients and freshly grated lemon zest in another bowl.

Then mix the two together in one bowl.
To make the pancakes “super fluffy,” Campos-Duffy mixes in whipped egg whites “at the end” of the mixing process.
Egg whites are pancakes’ “secret ingredient,” according to Shimkus.

After mixing the batter, Campos-Duffy toasts the pancakes on a griddle, places the pancakes in a mold, and adds blueberries.
“You were making this for the kids on Saturday,” Shimkus said.

“But now I’m not home on Saturdays,” Campos-Duffy said with a laugh.
In her absence, her children took on the role of making pancakes, she said.
“All my kids know how to make pancakes,” Campos-Duffy said.

When the pancakes are completely baked, sprinkle them with powdered sugar.

“Usually the kids fight over who gets to do it,” Campos-Duffy said.
Shimkus then tried the pancakes and declared, “These are really delicious!”
