Bars Embrace “Fluffy Juice” Trend
A growing number of bars are starting to use technology that turns fresh fruit juice into a light, frothy drink called “fluffy juice.”
This new style differs from traditional cocktail foam, which often includes egg whites or cream. Instead, fluffy juices are created by introducing air into the juice through whisking or swirling fresh citrus, adding texture without any extra ingredients.
The trend is largely credited to the New York City bar Dante, which gained popularity for its take on the Garibaldi cocktail, a classic Italian drink that combines orange juice and Campari.
Linden Pride, a co-owner of Dante, mentioned, “We viewed this as a daytime cocktail, attracting patrons for a bright, refreshing drink with low alcohol.” This fresh approach has inspired many other bars to experiment with aerated citrus, updating classic cocktails and diversifying their menus.
But it’s not just bars that are getting into this trend; home mixers are also trying to replicate the fluffy texture. Social media is buzzing with users showcasing their attempts using milk frothers or high-speed blenders to aerate fresh orange juice, trying to achieve that bar-like quality.
Interestingly, the simplicity of the Garibaldi—requiring just orange juice and Campari—makes it a favorite for home experimentation. One Reddit user hailed it as “the best two-ingredient drink in the world,” while another playfully quipped, “Move over, mimosa!”
What’s intriguing about fluffy juice is that it doesn’t change the actual ingredients; rather, it alters the texture, giving an airy feel without the addition of dairy or egg products.
It’s worth noting that not all fruits create this light texture in the same way. According to Pride, juices like citrus and pineapple are best for producing a stable foam.
Over time, the fluffy Garibaldi has become a signature item at Dante. “It turned into a symbol of Café Dante, embodying our vision for the place, and honestly, we never anticipated it would resonate so universally,” Pride reflected.
