A stylish new restaurant is making waves in the heart of Hollywood.
Located within the iconic Roosevelt Hotel in Los Angeles, Gable is quickly attracting attention for its stunning cocktails and diverse fine dining menu. Critics are already referring to it as “the new king” of the area.
The launch of this upscale eatery marks a significant shift for Hollywood Boulevard, which is currently grappling with high vacancy rates and a rise in homelessness.
The Roosevelt Hotel is nearing its centennial, having opened its doors almost a century ago, and has been a historic landmark for the declining entertainment industry, even hosting the very first Academy Awards in 1929.
In its prime, this venue was frequented by legendary stars like Marilyn Monroe and Clark Gable, after whom the new restaurant is named.
Having opened its doors in August, Gable aims to connect Hollywood’s storied past with the vibrant present, according to the operators.
“There are many excellent restaurants in LA, so we wanted to create something unique while honoring the history of the Roosevelt,” said Parker Sprow, the general manager. “We want it to feel like a lively dinner party atmosphere every time patrons visit.”
The menu, characterized as Contemporary Californian, offers a blend of American, Asian, Italian, and Mexican cuisines.
“Our dishes draw inspiration from the diverse cultures that make LA what it is,” Sprow explained. “It’s a fascinating fusion that’s truly unique to Los Angeles.”
One of the standout dishes is the grilled branzino, prepared ssam style—a traditional Korean method—and served with Mexican-inspired salsa macha and salsa verde, along with scissors to help share the meal.
The Sixth and Wilshire pizza, named after two borders in Koreatown, features bulgogi, red sauce, kimchi, and mozzarella for a Korean twist.
“It embodies Hollywood’s history while keeping us connected to the modern Hollywood scene,” Sprow noted.
Gable’s cocktail menu is categorized into three sections: bright, whimsical, and both spirited and spiritless. One of the standout drinks, called the Yellow King, combines tequila with yellow tomato, miso honey, stone fruit, and basil.
Critics have already taken notice of Gable, with publications praising it as “the new king of Hollywood” and highlighting menu favorites like a pork chop with anticucho glaze and grilled peaches.
“Clark Gable was once the king of Hollywood; it seems this new Gable might soon take that title if it continues this level of culinary creativity,” one editor mentioned.
In just a couple of months, the restaurant has experienced numerous fully booked nights and attracted a loyal following, according to Sprow.
“We feel fortunate that the public’s response has been so positive,” Sprow stated. “Right now, my priority is ensuring that we’re delivering the same quality experience for every guest we welcome.”
Sprow hopes that Gable will cater not just to hotel guests but also to local residents.
“I want it to feel like a Hollywood gathering spot,” he expressed. “Local residents should be able to stroll down the street and know they’ll find a dependable spot for good food, captivating ambiance, and warm service at Gable.”
Since the pandemic, Hollywood Boulevard has faced challenges with a significant drop in tourism and high vacancy rates, which reached as high as 30 percent just months ago, as reported by officials from the Hollywood Partnership.
