Chef Geoffrey Zakarian Discusses Healthy Eating Habits
Geoffrey Zakarian, the Michelin-starred chef, emphasizes that it’s not so much about geographical obstacles as it is about personal choices when it comes to eating healthy in America. He believes that technological advancements have made fresh produce more accessible, shifting the focus from access to individual habits.
During an event at the Great American State Fair, Zakarian expressed his views on nutrition and cooking, stating, “This is not a food desert. This is the United States of America.” He addressed the convenience of grocery delivery apps like Instacart, suggesting that they have bridged the gap previously noted by the USDA’s definition of food deserts—areas with limited access to affordable and healthy food.
While the USDA bases its designations on income and supermarket proximity, Zakarian argues that modern technology has changed the landscape drastically. He pointed out that nearly everyone can now order groceries online, which he feels diminishes the relevance of geographical disparities in accessing healthy foods.
Nevertheless, he acknowledged that affordability remains a significant concern, as data from the Urban Institute indicates a 32% increase in food prices over the last five years. Zakarian urges families to prioritize meal planning and consider the costs associated with convenience, suggesting that home cooking is often more economical in the long run.
“There’s really no reason not to cook for yourself or cook for your family,” he emphasized. “It takes effort to do this and stay healthy.”
He suggests a more systematic approach to meal preparation rather than a chaotic daily routine. Zakarian recommends planning meals and shopping bi-weekly. This method, he believes, can yield multiple meals from fewer cooking sessions, saying families might find surprises in their leftovers.
Cooking together, he mentions, offers additional emotional and psychological benefits for families, reinforcing the idea that the kitchen serves as the heart of any home. “When you open that food, the kids around you will be jealous of the delicious meals you’ve prepared,” he noted, underscoring the pride that can come from home-cooked meals.
