Noma’s LA Pop-Up Faces Turmoil Amid Chef’s Resignation

Customers who quickly booked reservations at Noma’s LA pop-up, where meals cost $1,500 a plate, are now backing out as controversy swirls around the restaurant.

Typically, reservations would be scarce, but the California Post noted that spots were still available on the Resy app.

Currently, no reservations can be booked through Tock, which usually has waiting lists for such high-demand restaurants.

According to reports, the loss of head chef and co-owner René Redzepi, who resigned amidst claims of creating a toxic work environment, has added to the uncertainty. Former staff accused Redzepi of abuse—physically, psychologically, and verbally.

Redzepi announced his departure on Instagram, stating, “After more than 20 years of building and leading this restaurant, I have decided to step down and allow outstanding leaders to lead the restaurant into its next chapter.”

In a video message, a visibly upset Redzepi explained that he was stepping back to ensure employees “feel 100% safe.”

Despite stepping down, he indicated that he would still be present for the planned 16-week stint in Los Angeles at a location called Paramore Estate.

“We’ve been open for 23 years, and I’m extremely proud of our employees, our creativity, and the direction Norma is headed,” he expressed. He mentioned that the team would continue towards their Los Angeles residency, which aims to highlight their hard work and offer something extraordinary to guests.

On the launch day of Noma LA, protesters gathered outside the venue, including Jason Ignacio White, the director of fermentation at Noma, who is associated with a whistleblower site detailing the allegations against the restaurant.

This compilation of employee accounts, which includes insights from 56 current and former staff members, has led to the withdrawal of major sponsors, such as American Express, from the event.

In response to the escalating situation, Noma announced an independent audit to uphold safety and quality standards. Plans for reorganization include adding a human resources team, implementing four-day workweeks, establishing employee pension funds, and providing additional staff benefits and leadership training.

The residency is set to conclude on June 26th.

Initially, when reservations opened on January 26, Tock sold all $1,500 spots within just four minutes. Even with technical difficulties for many hopeful diners, the site declared, “Norma LA 2026 is sold out.”
