Katsuya Uechi, Influential Sushi Chef, Passes Away at 67
Katsuya Uechi, celebrated for transforming Los Angeles’ sushi landscape, has died unexpectedly at the age of 67. He was the mastermind behind the popular spicy tuna crispy rice.
The news was shared via an Instagram post from his restaurant group, although details about his cause of death were not disclosed as of Thursday night.
“Mr. Katsu greatly influenced the sushi scene in Los Angeles and beyond. We honor his legacy today, continuing the vision he dedicated his life to,” the statement expressed.
“Our thoughts are with his family and everyone who knew him… Rest in peace, Chef. Your influence remains in every diner we serve and every dish we prepare.”
Born in Okinawa, Uechi moved to Los Angeles in the 1980s and opened Sushi Katsuya in Studio City in 1997.
At that time, the sushi restaurant on Ventura Boulevard was characterized by a traditional and unpretentious ambiance.
However, Uechi took a different path.
With a blend of top-tier sushi skills and inventive, modern flavors, he quickly garnered a dedicated following and reshaped California’s sushi culture through creative dishes that pushed boundaries without compromising technique.
His most famous creation, the spicy tuna crispy rice, emerged in the early 2000s and became widely popular, making its way into sushi restaurants across the U.S. It’s regarded as one of the most impactful dishes in the LA culinary scene.
Another highlight on his menu is yellowtail sashimi, served with a zesty ponzu sauce and slices of jalapeño or serrano for an extra kick.
Uechi expanded the Katsuya brand beyond its original Studio City spot, establishing locations throughout Los Angeles, including in Brentwood and Hollywood, and transformed his name into one of the most well-known sushi brands in California.
