Shifting Tides in Las Vegas Dining

Las Vegas buffets used to be a major attraction for tourists, but recently, food halls are stealing the spotlight. Even Rick Harrison from “Pawn Stars” has commented on this shift, saying the decline of buffets illustrates a kind of “Darwinism.” He reminisced that, unlike a century ago when lobster was a poor person’s food, tastes have dramatically changed.

The once-renowned Vegas buffets are increasingly being replaced by modern food halls. For instance, the Rio’s Carnival World Buffet closed in 2020 but reopened in 2024 as a dining hall. Similarly, Aria Buffet shut its doors in 2020, with Eats Food Hall emerging in its place by 2022. The Big Top Food Court at Circus Circus opened in 2021, taking over some of the buffet space.

Despite these transformations, Harrison’s restaurant continues to focus on traditional barbecue, which entails a lengthy 16-hour smoking process. “We don’t cut the time,” he insisted. His meats are locally sourced, proudly catering to those who appreciate authentic barbecue, which many international visitors, he believes, often find surprising and delightful.

Interestingly, as tourist numbers in Las Vegas have dipped—down 12% in July alone—Harrison pointed to high food prices as a possible reason. For instance, he mocked the notion of a $1,000 steak, calling it “the most ridiculous thing in the world.” This sentiment echoes the shifting dining landscape in a city that has seen substantial changes in its culinary offerings.

Visitor numbers fell from over 3.5 million last year to around 3 million this July, with occupancy rates on the strip also dropping by 7%. Harrison attributes this decline to inflation and overall changes in how people approach vacations these days. Yet, he remains hopeful about Las Vegas’s diverse food scene, mentioning that there’s something available for every budget—from food courts to high-end dining experiences. “You got something here for all your budget,” he remarked.
