(NEXSTAR) — November is here, and if you’re anything like me, you’re probably already thinking about Thanksgiving. This year, it falls on one of the later dates, which influences when you should buy your turkey and when to start thawing it.

Fortunately, you’ve got some time to let that turkey thaw. But, is it too soon to purchase it?

According to food safety experts, the answer hinges on how you plan to store the turkey.

If you’re opting for a fresh turkey instead of a frozen one, the Minnesota Department of Health suggests waiting about 1–2 days before cooking it. In the meantime, keep it in the fridge, ideally placed on a tray or in a skillet to catch any drips.

For those going with frozen turkeys, you’re in a good spot as long as you allow enough time for it to thaw. The health department mentions that you can technically store turkeys in the freezer indefinitely, but cooking them within a year is advisable for best quality.

This means if you’re really prepared, you can snag a turkey right after Thanksgiving and keep it in the freezer until next year.

When it’s time to thaw, it’s crucial to make sure your turkey stays at a safe temperature. The U.S. Food Safety and Inspection Agency emphasizes this point. There are three safe methods for thawing a turkey, but one way to avoid is leaving it out on the counter for an extended period.

If a frozen turkey is left out for more than two hours, it risks tempering into the “danger zone” (between 40°F and 140°F), where harmful bacteria can proliferate rapidly, FSIS advises. Sure, some parts might still be frozen, but the outer layers could become unsafe.

Instead, it’s best to thaw your turkey in the refrigerator, cold water, or the microwave. The size of your turkey will determine how early you should start defrosting.

And if you forget to take it out in time? Don’t panic! FSIS states you can cook a frozen turkey; just be aware it will take about 50% longer than if it were thawed. Also, if you find yourself in a bind, several restaurant chains will be open on Thanksgiving Day.
