Noma Products Store Opening in Los Angeles
After chef Rene Redzepi’s recent decision to step back from Noma amidst a series of controversies, a new store featuring Noma’s premium products is set to open in Los Angeles.
The first U.S. location of Norma Projects will reside in Silver Lake, located just northwest of downtown Los Angeles. Customers can expect to find an array of high-quality sauces and vinegars priced quite attractively. It’s not far from where the renowned Michelin-starred restaurant operates its pop-up in Copenhagen.
Opening on April 9th, the shop aims to showcase the work from their test kitchen and fermentation lab, providing both classic Copenhagen flavors and some new limited-time offerings crafted in Los Angeles.
According to their Instagram announcement, the store was designed for exploration and tasting—essentially a way for people to bring a piece of Noma into their kitchens.
Interestingly, one item grabbing attention is a 3.38-ounce bottle of Barrel-Aged Wild Rose Balsamic Vinegar priced at $150. The description touts it as a luxurious tribute to traditional Italian balsamic, aged with wild roses sourced from Denmark.
For coffee aficionados, there’s a monthly subscription option for Noma Kaffe available for $70. This subscription promises a selection of two 250g bags of coffee curated in collaboration with coffee farmers worldwide.
Additional items include an 8.4-ounce bottle of Mushroom Garm Cooking Sauce at $25 and a nutty pumpkin seed praline spread priced at $37. The store will also carry various merchandise, such as a $42 baseball cap and a $26 tote bag featuring a whimsical frog design.
This pop-up shop will open Thursday through Friday from 11 a.m. to 7 p.m. and Saturday through Sunday from 10 a.m. to 6 p.m., operating from April 9th through June 26th, which marks the end of their Los Angeles engagement.
However, the store’s opening hasn’t gone without protest. Recently, demonstrators gathered outside, voicing their concerns related to allegations of poor treatment of employees at Noma. Reports surfaced about extensive working hours and troubling experiences attributed to the restaurant’s culture. Former employees have described “psychological warfare” in the kitchen, creating a stark contrast to the acclaimed dining experience.
Redzepi himself had recently shared an emotional video, announcing his departure from the restaurant just ahead of the Los Angeles pop-up. He urged his staff to support one another, stating, “after more than 20 years, I’ve decided to step down and let an extraordinary group lead the restaurant into its next chapter.”
In his speech, Redzepi expressed remorse about the current situation, assuring the team that he didn’t believe it reflected their true values as an organization. He voiced his pride in their collective achievements and emphasized the importance of perseverance.
The dynamics within the current team appear to be filled with optimism, as expressed in a recent statement. The belief seems to be that Noma has always represented more than just a singular figure, and this next step embodies that spirit.
