THis wonderfully sharp and sweet crowd-pleasing creations are perfect for crowds because they’re easy to make in large batches. The ginger-like aroma of lemongrass flowers pairs beautifully with the tropical fruits. Who doesn’t like a pink drink?

For tequila with lemongrass
100g fresh lemongrass
High quality blanco tequila 250ml
for drinks
Tequila with lemongrass 50ml (see above and methods)
Guava juice 40ml
15ml lime juice
Simple sugar syrup 30ml

Trim and discard the base of each lemongrass stem, then cut the stems into 2-1/2 lengths and place them in a clean jar. Pour in the tequila until covered, seal and place in the refrigerator for at least 2 hours to infuse.
To make the drink, measure guava juice, lime juice, and syrup into a highball glass, add tequila, and stir. Pour enough pink soda to fill the glass halfway and add ice until the glass is full. Garnish with dried pink grapefruit (or other citrus) slices and serve.
