“People who eat wild meat should be aware that proper cooking is the only reliable way to kill the parasite that causes trichinosis, which is resistant to freezing,” Shama Cash Goldwasser, CDC’s Epidemic Intelligence Service officer, told Fox News Digital.
The experts shared an overview of cases reported so far and tips to prevent trichinosis.
How did the infection from bear meat come about?
In early July 2022, a 29-year-old man, whose name has not been released, began feeling ill a few days after sharing a meal during a family reunion in South Dakota.

There are about 10,000 cases worldwide each year, but only about 15 cases per year in the United States.
The disease has historically been linked to eating raw pork, but Glatt noted that these outbreaks are declining as a result of improved understanding of proper food preparation methods.

Although infection is rare, it can be contracted after eating even small amounts of raw or undercooked meat, the agency warned.
Symptoms of the disease
The severity of symptoms depends on how much of the parasite was ingested, Roberts told Fox News Digital.
The CDC said that when contaminated meat is consumed, the stomach produces acid, which releases the larvae.

Prevention is key

The agency recommended that people always wash their hands with soap and warm water before and after handling raw meat, and remember to thoroughly clean meat grinders and other kitchen utensils after use.
