Cocktail of the week: Cornus’ clarified coffee negroni – recipe | Cocktails

This is perfect for nights where you really need a hard drink, good the moment you walk down the entrance. Place Premix in the fridge and use within a week.

Clarified Coffee Negroni

Serve 1

For Premix (450ml, or 6 servings enough)
150ml Campari
150ml sweet red vermouth
– I'll use it Cocchi Vermouth Di Torino
150ml gin – I'll use it Plymouth
15ml of brewed coffee,cooling
125ml whole milk

For drinks (per serving)
75ml clarified coffee Negroni Premix (See above and methods)
1 width strip orange peel

Pour all the premix ingredients into a large jar and inject for 5 minutes. Arrange large thin sieves on the muslin, place them on a clean jar, and pour in the premix injection. Milk starts to turn into a paste, which helps to eliminate liquid tannins, colours and cloudy particles, while at the same time helping to balance the taste of the alcohol. Once the tension is over, decant the liquid into a clean bottle and store in the fridge for up to a week.

To make a drink, pour 75ml of the chilled premix into a tumbler filled with ice. Twist the orange peel on top, perfume the drink with orange oil, then drop the skin into a glass and serve.
