Syracuse – A new flavor is on its way to the beloved 25-cent milk bar at the New York State Fair, thanks to a $3 million investment from Governor Kathy Hochul’s administration, which was announced during the fair’s kickoff on Wednesday.
“We’re not just sticking with vanilla and chocolate anymore; strawberry will make its entrance,” Hochul said, capturing the crowd’s attention at the celebration breakfast held at the fair’s Expo Building.
The renovation of the iconic rainbow dairy bar will introduce refrigeration technology and storage tanks, allowing fresh milk to be sourced from Empire State Farm.
“This investment sends a message that we are committed to keeping our attractions at a high standard,” Hochul remarked.
The revamped dairy bar is expected to debut at the 2027 Great New York State Fair.
“For some time, it was called a ‘rainbow milk bar,’ but it only offered two colors,” noted Richard Ball, from the state’s Agriculture and Markets. “I’m really excited to see strawberry milk added.”
During the breakfast, Ball even gifted Hochul a shirt featuring a cow with the word “Legendary” on it.
Last year, Hochul made a promise to keep milk prices stable at the bar, ensuring they wouldn’t go up.
Traditionally operated by the Cornell Cooperative Extension, the stand is staffed by children involved in the 4H Youth Agriculture Program.
The fair runs daily from 9 am to 11 pm starting September 1st, featuring a variety of musical performances and rides while celebrating New York’s agricultural heritage.
“For anyone who thinks New York is all skyscrapers, we invite you to explore the rest of the state,” Hochul added.
The first day of the fair, known as Governor’s Day, traditionally includes media tours and visits with many of the state’s top officials and aides.
