Only upscale restaurant in California city shutting down, chef plans to reopen in garage

Chef Plans to Transform Restaurant into Home Business

In a surprising turn of events, Chef Michael Warring, who has been running Vallejo’s sole fine-dining establishment for 14 years, has decided to close his restaurant and relocate it to his garage. This shift is set to happen by the end of the year, with intentions to reopen next year in a much smaller, more personal setting.

Warring, alongside his wife, Ali Gulczynski, shared this unconventional decision with the San Francisco Chronicle. “If our restaurant was a more intimate, close-knit thing, this is going to be that on steroids,” he explained, emphasizing a desire for a space without the usual constraints of a traditional restaurant.

Moving the restaurant home is expected to significantly reduce costs, especially since Warring and Gulczynski are the only staff. This change will allow them to save on rent and childcare expenses.

Warring envisions this new setup as a welcoming environment for guests. “To create a restaurant that feels less like a place you visit and more like a place you’re invited into,” he noted in a Facebook post. The aim is to foster a smaller and more connected dining experience.

Warring’s restaurant, originally opened in 2012, offers a cozy atmosphere with just 18 seats. The establishment has a unique open kitchen where the chef prepares meals for guests. It features two tasting menus: a 7-course meal priced at $94 per person and a 12-course menu at $134.

Having trained at the Culinary Institute of America, Warring has worked in some of the country’s finest kitchens, including the renowned Auberge du Soleil in Napa Valley.

This move not only represents a shift in location but also an opportunity for Warring to redefine his culinary identity. “Now that a big chunk of the overhead is gone… I’m going to take the interim and really try to iron out some personal stuff and figure out who I am on some different levels,” he remarked.

As a final note, Warring has planned a last dinner service at the Vallejo restaurant on December 5, marking the end of an era before this new chapter unfolds.
