Panera Bread’s New Menu Item Faces Criticism

Panera Bread’s recent introduction of a new menu item has stirred quite a reaction online. Employees from the chain are voicing concerns that this new addition could lead to perfectly good bread and leftover salads being discarded.

The fast-casual restaurant launched its Salad Stuffer on April 8, which it promotes as a “bread bowl for salads.” However, numerous workers on Reddit have expressed that the preparation process requires them to dispose of significant amounts of Italian bread and, in some cases, even uneaten salad.

Mark Sciambra, the company’s chief marketing officer, claimed in an announcement that guests who sampled the new rolls “couldn’t get enough,” suggesting it was a fresh twist on their traditional bread bowl.

Despite this upbeat pitch, responses from the public have been less than welcoming.

A Reddit user, purportedly an employee, mentioned, “Bread cores are thrown away and a lot of salads find their way to the trash.” They went on to argue that these items represent a significant waste of food and money, cautioning others against purchasing them.

Another participant in the discussion shared an image depicting a tray laden with hollowed-out bread loaves in that same Reddit community.

One worker recounted, “During a meeting regarding the menu changes, it was stated that these leftovers couldn’t be given to customers or even to birds.”

Some commentators have questioned whether this product genuinely brings innovation to the table, suggesting it looks more like a modified sandwich than something entirely new.

Comments included, “What exactly is a salad stuffer roll? Are you really just putting salad in a hollow roll? Isn’t that essentially a sandwich?” Another questioned why a sandwich couldn’t just be made instead.

Creative ideas to minimize waste were also shared. “I made croutons as a snack,” noted one user, while another suggested making a French toast casserole using the leftover bread. Someone else thought that if the CEO had a smart strategy, the unused bread could serve as a new crouton.

A few more creative spirits proposed using aluminum foil to bake the dough, preventing it from becoming hollow and wasted.

Outsider reviews have also pointed out that the product may not justify its price, adding to the concerns from both staff and customers. A recent review from a food site described Panera’s stuffed salad as merely “okay,” though it did commend some of the heartier combinations like the steakhouse salad stuffer. In the end, it recommended opting for a half salad with a complimentary baguette instead.

Furthermore, critics have remarked that Panera’s offering resembles items from a Texas chain, Bread Zeppelin, known for its stuffed baguettes. Bread Zeppelin took to social media to comment humorously, “Hey @PaneraBread, the Zeppelin walked, so the Stuffer… let’s give it a try.”

While some had reservations, not all feedback was negative. One Reddit user claimed the salad stuffer was “delicious,” comparing it to the chain’s wraps.

In a statement about the new item, Panera mentioned that their chefs and bakers created the Italian Stuffer Roll to effectively combine soft, fluffy bread with a fresh, dressed salad. Customers can customize any salad on the menu into a stuffer, from staples like the Green Goddess Cobb Salad and Caesar Salad to new, specially designed options at participating locations.
