Mariana Leon, creative director of Wicked Finch Farm (wickedfinchfarm.com), makes her own bourbon blueberry jam from blueberries she grows on-site in New York’s Hudson Valley.

“I love entertaining in the summer, but I can’t bear the thought of turning on the oven,” she said.

  • Jar of 6oz Wicked Finch Farm Bourbon Blueberry Jam (or your favorite berry jam)
  • 8 oz.cream cheese, softened
  • 1 cup fresh cream
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla essence
  • Squeezed lemon juice, 1/2 teaspoon lemon zest (optional)
  • Half a box of graham crackers (14.4 oz box)

1. Whip the cream at high speed with a mixer fitted with a whisk attachment until stiff peaks form.

2. Gradually add the cream cheese on medium speed.

3. Add sugar, vanilla extract, and lemon juice if using. Add lemon zest if using.

4. Line a 9″ x 5″ loaf pan with parchment paper and layer the bottom with graham crackers. Break the crackers together. Spread a thin layer of cream cheese mixture over the graham crackers. Next add a layer of jam. Repeat for 2-4 more layers, depending on desired cake height.

5. Chill the cake in the refrigerator for 2 hours. When you’re ready to eat, remove from the loaf pan and place on a plate. Top with additional cream cheese mixture.

If desired, sprinkle jam on top for decoration or add swirls for a marbled effect.

Top with berries, lemon zest, or edible flowers, if using. enjoy.
