In a heartfelt moment, Rene Redzepi, the founder of the renowned restaurant Noma, announced his departure amid several controversies. A video captured him delivering an emotional address to his staff, urging them to “fight” and support one another as they navigate this challenging time, emphasizing that they’re “running the show right now.”

In a message on Instagram, he shared, “After more than 20 years of building and leading this restaurant, I have decided to step down and allow an extraordinary group of leaders to take the restaurant into its next chapter.”

During his speech, Redzepi expressed his regret, saying, “I’m sorry that everyone is in this situation… I don’t think this represents our team.” He also conveyed his pride in what they’ve accomplished together.

However, he acknowledged the difficult circumstances, stating, “But we’re in the belly of the beast here.” He reassured his team that he was leaving to provide them with peace of mind, but that they must now take the reins and fight for the future of the restaurant.

He clarified, “I’m not running away from my responsibilities.” Redzepi reflected on his time there, remarking on the changes they’ve undergone and calling on everyone to “step up and fight” once again.

He emphasized the individual connections they create with guests, noting, “In the long run, that’s enough.” Redzepi promised his staff, many of whom have been with him for over a decade, that they would prevail through this together.

He reiterated his necessity to distance himself, stating, “My determination remains the same: we want to work towards being a special organization that puts food at the forefront and is part of the change.” He also pointed out the complexity of the current situation, highlighting that “there are many sides to this and it’s not one-sided.”

Though he refrained from discussing the specifics of the controversies surrounding Noma during his speech, he addressed them in a later statement, which followed reports detailing serious misconduct allegations against him.

Reflecting on recent events, he wrote, “The last few weeks have brought attention and important conversations about our restaurants, our industry, and my past leadership.” He acknowledged his efforts to improve as a leader but also accepted responsibility, stating, “An apology is not enough. I take responsibility for my actions.”

Redzepi is currently facing criticism over issues like long working hours, unpaid labor, harassment, and a toxic kitchen culture at Noma. Former employees have described the environment as a “torture chamber” rather than a nurturing space for culinary creativity.

Redzepi concluded with optimism, saying, “Today’s Noma team is the strongest and most exciting team we’ve ever had. Noma was always greater than one person, and this next step honors that belief.”
