He has been creating the French treat for over 30 years.
Alvin said that Mardi Gras season is the busiest time of the year, with his team baking more than 100 king cakes in the shop a day.

Kingcakes are popular with all kinds of parties, he said, from Tuesday to fatty ones.
“It's part of the celebration and something you can share with friends,” Alvin said. “It's become an obsession among all people. Every year it seems to be even more exciting.”
Alvin said the high cost of the materials makes it difficult to make profits.

He does not plan to raise the price of the King's cake, but he hopes that the cost of the eggs will soon collapse.
“You can get it at a certain supermarket for over $10, or $12 per $12. It's all mystical,” Alvin said.
